Depends on how much effort you want to put in. Get a bariatric commode and just like it with a garbage bag.

As for the clean off get a shower chair and just rinse her down.

I owned my own home so it was a little different, but when my ex got really big we upgraded our toilet but a lot of times it was easier to have her just shift herself to the shower chair. Once she caught her breath she’d bend over and I’d help her clean up.
